  • Cold water

(For the filling)

  • Bacon
  • Butter
  • Leeks
  • Fresh thyme leaves
  • Flour
  • Stock
  • Double cream
  • Mustard
  • Cooked turkey

Method

  1. Make the pastry (omit if using ready-rolled): Combine flour and mustard powder. Grate in the cold butter and mix. Add 100ml cold water and knead into a soft dough. Wrap and chill for at least 30 minutes.

  2. Prepare the filling: In a deep pan over low heat, cook the bacon for 5–10 minutes. Add butter, sliced leeks, and thyme leaves. Cover and cook for 15–20 minutes until softened.

  3. Stir in the flour and cook for a few minutes before gradually adding the stock. Simmer until the sauce thickens. Transfer to a bowl and cool completely.

  4. Preheat the oven to 200°C (180°C fan).

  5. Mix the cooled leek mixture with cream, mustard, and turkey. Spoon into a 23cm pie dish.

  6. Roll out the pastry into a 25cm circle on a floured surface. Brush the pie dish edges with beaten egg, cover with pastry, pressing to seal. Trim and crimp the edges, then cut three air holes on top.

  7. Bake for 45 minutes or until golden and bubbling.
