Renowned TV chef Tom Kerridge has shared the kitchen ingredient he relies on above all others: crispy chilli oil. Known for his cooking expertise and healthy eating guidance, Kerridge confessed he uses this vibrant condiment on a wide array of dishes, including omelettes, pasta, cauliflower cheese and even brie.
Speaking to The Guardian, the Michelin-starred chef described why crispy chilli oil has become his essential finishing touch in the kitchen. He emphasised how its satisfying crunch and well-balanced saltiness add depth and texture to otherwise soft meals.
“Honestly, this chilli oil is the naughtiest product in the world; it feels like it is everything that is lush about Chinese food,” Kerridge explained. “It’s not too hot and spicy, but it’s clearly chilli. It’s that crunch, that crispness, that saltiness, those lovely umami flavours.”

He revealed he stocks up on several jars at a time to ensure he never runs out. Kerridge prefers the crispy chilli variety over alternatives like black bean oil for its superior texture. He uses it primarily as a condiment to finish dishes rather than cooking it in, highlighting its ability to lend a salty, crunchy accent wherever it’s sprinkled.
“I put it on absolutely everything. Anything that’s a bit soft, where you want a bit of crunch on the top, it’s perfect for. On cauliflower cheese, macaroni cheese, sprinkled on an omelette, on cold meats. A couple of nights ago I just put it on a piece of brie. Lush.”
This penchant for adding bold texture and flavour reflects Kerridge’s ongoing passion for combining indulgence with sophisticated taste. Beyond culinary tips, Kerridge has openly discussed his personal journey to better health after becoming a father in 2015. Motivated by the desire to be fit for his son, Acey, he drastically changed his lifestyle, cutting out alcohol, sugar and carbohydrates. This transformation saw him lose an impressive 12 stone (around 76kg) over three years.
His openness extends further to mental health: following his son’s ADHD diagnosis, Kerridge discovered he shares the condition himself. This insight has helped him understand why he thrives amid the high-energy environment of professional kitchens and television production, where sensory stimulation is intense and fast-paced.
