Renowned television chef James Martin made a welcome return on ITV’s Saturday Morning this weekend, sharing expert advice on how to cook flawless eggs and store them correctly.
In the episode aired on May 17th, James was joined by Charley Boorman from Long Way Home and showcased delicious recipes from chefs Asma Khan, Ronnie Murray, and Mike Reid.
During one segment, the 52-year-old demonstrated various egg-cooking techniques, including making an omelette, frying eggs in butter, and preparing scrambled eggs. Along the way, he revealed a clever method for separating the yolk from the egg white before cooking.

James picked up a couple of eggs and gave them a gentle shake for a few seconds. He explained that this simple trick helps center the yolk within the egg and separates the white, optimizing the texture when cooked.
He said: “I’m going to take our eggs, and all I’m going to do is shake them. My mum taught me this little trick—shake the eggs and what usually happens is, one out of three times, it helps the yolk go into the middle of the egg, but the whites are separated.”
James continued, “When you fry the egg, you can actually see the separation in the whites. If the egg white is older, it all clumps together, creating a ‘flooded’ egg.”
In addition to cooking tips, James shared advice on egg storage, recommending against refrigerating eggs. “Don’t store eggs in the fridge; keep them outside,” he said. This helps maintain their freshness and quality.
He concluded with a simple guideline for egg lovers: “There are tons of varieties, so when you find one you love, stick by it.”
