As autumn draws near and temperatures begin to drop, many people start to feel the effects of the season’s coughs and colds. During these times, nothing comforts quite like a warm, nourishing bowl of soup to rejuvenate both body and spirit.

  1. Warm a drizzle of extra virgin olive oil in a pan and gently soften chopped onion.

  2. Add crushed garlic, grated ginger, chopped carrots, and chunks of sweet potato into the pan.

  3. Combine the ingredients before mixing in mild chilli powder, soy sauce, and vegetable stock.

  4. Allow the mixture to simmer until all vegetables are tender.

  5. Blend the soup until smooth and creamy.

  6. Stir through fresh orange juice and kefir, seasoning with salt, and heat gently without boiling to preserve the live cultures in the kefir.

  7. Serve accompanied by crusty bread and garnished with orange zest, fresh parsley, chilli flakes, and a swirl of extra kefir.

Beyond its comforting warmth, this soup is packed with ingredients known to support the immune system effectively. Sweet potatoes and carrots provide abundant beta-carotene, which the body transforms into Vitamin A-essential for maintaining mucosal linings in the lungs and gut and regulating immune response.

Garlic introduces allicin, renowned for its antimicrobial and antiviral qualities, while ginger offers gingerol, noted for its anti-inflammatory effects. Research suggests that regular garlic intake can decrease the frequency and impact of common colds.

Oranges bring a rich source of Vitamin C, crucial for cellular function within both innate and adaptive immunity. Deficiencies in Vitamin C can weaken the immune response and increase the risk of infection.

Lastly, kefir contributes valuable probiotics that support gut health, which houses a substantial part of the immune system. Studies on the microbiome indicate that probiotics like those in kefir can regulate immune cells and may reduce the length of respiratory illnesses.

Together, these ingredients make for a deliciously wholesome soup designed to help you stay warm, nourished, and resilient through the autumn months.
